[Recipes] Three breakfast Ideas with Chobani

Hello there, it’s been a while since my last recipe post. What a crazy last semester at school it has been… I’ve been inundated with deadlines every week! Well, it’s finally coming to an end and I can soon proclaim that I’m a graduate.

This time I’ll be sharing with you some of my breakfast recipes that consists of Chobani yogurt. Don’t worry, these are quick to whip up even during busy mornings. Yogurt is so versatile, it can be used in both savoury and sweet dishes.

In the following recipes, I am using Chobani 2% plain Greek yogurt. I like how it is not too watered down despite having a very low fat content. It also has a smooth and creamy texture that makes it great as a substitute for whipped and sour cream.

Here are some breakfast ideas:

  1. Figs, maple and yogurt on toast

I was glad to chance upon figs at the grocery store and felt inspired to try them with yogurt. This makes for a divine combination. The yogurt provides tartness that is nicely balanced out by the figs and maple. Now if only figs were more readily available in my home country…

What you will need

–        Fresh figs
–        Maple syrup (can substitute with honey)
–        1 – 2 slices of bread
–        Chobani 2% plain Greek yogurt

Steps

–        Toast bread
–        Spread on a layer of Chobani
–        Layer with sliced up fresh figs

  1. Avocado & soft-boiled eggs on toast

Can’t express how much I love the combination of avocado and eggs. This recipe is the most time-consuming of the lot but it can be prepared in a jiffy if you multi-task, i.e. boil the eggs while preparing the avocado mixture. The yogurt adds a nice creamy texture to the avocado, almost like guacamole. Let the yolk flow and mop up the remnants with the bread.

What you will need

–        1 ripe avocado
–        2 tablespoons of Chobani 2% plain Greek yogurt
–        2 eggs
–        Salt, pepper, paprika
–        1 – 2 slices of bread

Steps

–        Mash the flesh of an avocado and yogurt together
–        Make the softboiled eggs: add eggs into boiling water and boil for 5.5 minutes. Remove from heat and let the cool down in a bowl of iced water. Peel the eggs.
–        Toast the bread
–        Top with avocado
–        Slice the eggs into half and lay it on top of the avocado
–        Season with salt, pepper and paprika

3. Yogurt bowl with fruit and granola

This is really quick to put together unless, like me, you are particular about the arrangement of the toppings.  You can even store it in a container for a portable breakfast. What a hearty and delicious start to your day.

What you will need

–        Granola (I used my homemade matcha granola)
–        Assortment of fruits
–        Chobani 2% plain Greek yogurt

Steps

–        Arrange fruit and granola on top of a bed of yogurt
